|Mushrooms||6 Medium, sliced|
|Vegetable oil||2 Tablespoon|
|Firm tofu||1 Pound, crumbled and drained|
|Ground turmeric||1⁄2 Teaspoon|
|Chili powder||2 Teaspoon|
|Cooked kidney beans||1 Cup (16 tbs), drained|
|Marinara sauce/Tomato sauce||1⁄2 Cup (8 tbs)|
|Cherry tomatoes/1 large tomato, cut into wedges||8 , halved|
Saute onion, green pepper and mushrooms in vegetable oil for 3 minutes. Add vegetarian sausage and saute 1 minute.
Mix in tofu and all remaining ingredients except fresh tomatoes. Cook over medium heat, stirring occasionally, until hot. Add tomatoes. Cover and cook 2 minutes or until tomatoes are heated through.
