Tofu Rancheros

Ingredients
  Onion 1 Small, chopped
  Green bell pepper 1⁄2 Large, chopped
  Mushrooms 6 Medium, sliced
  Vegetable oil 2 Tablespoon
  Firm tofu 1 Pound, crumbled and drained
  Ground turmeric 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Chili powder 2 Teaspoon
  Cooked kidney beans 1 Cup (16 tbs), drained
  Marinara sauce/Tomato sauce 1⁄2 Cup (8 tbs)
  Cherry tomatoes/1 large tomato, cut into wedges 8 , halved
Directions

Saute onion, green pepper and mushrooms in vegetable oil for 3 minutes. Add vegetarian sausage and saute 1 minute.
Mix in tofu and all remaining ingredients except fresh tomatoes. Cook over medium heat, stirring occasionally, until hot. Add tomatoes. Cover and cook 2 minutes or until tomatoes are heated through.
