Tofu Broccoli Strata

Ingredients
  Frozen chopped broccoli 10 Ounce (1 Package)
  Cubed bread 2 Cup (32 tbs) (Day Old)
  Sliced swiss cheese 4 Ounce
  Tofu 8 Ounce, drained and cut into 1/2-inch cubes (Fresh)
  Chopped pimiento 2 Tablespoon, drained
  Eggs 4
  Milk 1 3⁄4 Cup (28 tbs)
  Salt 1 1⁄4 Teaspoon
  Ground red pepper 1 Dash
  Cubed bread 1 Cup (16 tbs) (Day Old)
  Butter/Margarine 2 Tablespoon, melted
Directions

In a medium saucepan cook chopped broccoli, covered, in a small amount of boiling, lightly salted water for 3 minutes; drain well.
Place the 2 cups bread cubes on the bottom of an ungreased 8x8x2-inch baking dish.
Top the bread cubes with 4 ounces sliced Swiss cheese.
Top the Swiss cheese with all the cooked broccoli, cubed tofu, and chopped pimiento.
Place 4 ounces sliced Swiss cheese and the 2 cups bread cubes atop.
In a bowl thoroughly beat the eggs; stir in the milk, salt, and ground red pepper.
Pour the egg mixture over the ingredients in the baking dish.
Cover and place strata in refrigerator to chill for 1 to 3 hours.
Toss the 1 cup bread cubes with the melted butter or margarine, Sprinkle atop the chilled mixture.
Bake, uncovered, in a 325° oven for 55 to 60 minutes or till a knife inserted near center comes out clean.
Let stand 10 minutes before serving.
