Tofu Croquettes

Ingredients
  Onion 1 Small, finely chopped
  Celery 1⁄4 Cup (4 tbs), finley sliced
  Potatoes 1 Cup (16 tbs), mashed
  Tofu 1 Cup (16 tbs), crumbled
  Salmon 4 Ounce, drained
  Bread crumbs 1 Cup (16 tbs)
  Salt and pepper 1
  Vegetable oil 1⁄4 Cup (4 tbs)
  Mayonnaise 1
  Parsley 1
Directions

–  In a bowl, combine all ingredients except oil and mayonnaise, and shape into croquettes; set aside.
–  In a skillet, heat oil and fry croquettes on both sides until nice and golden. Sprinkle with parsley and serve with mayonnaise.
