Sponge Toffee

 

Sponge toffee is a sugar based candy which has a light, firm and crispy texture. It has an appearance similar to sponge. It is called with different names in different regions.

 

Regional nomenclature

 

Britain – cinder toffee

USA – sponge candy, sea foam, angel food candy, fairy food candy, golden crunchers

South Africa / Australia – honey comb

Torokmez - Hungary

Scotland – puff candy

New Zealand – hokey pokey

 

 

Ingredients and Preparation

 

Traditionally, brown sugar is used along with either corn syrup, golden syrup, molasses or liquid glucose to make sponge toffee. Baking powder is used to bring the sponge like appearance effect. Sugar, liquid glucose, corn syrup are heated in a flat bottom pan without stirring the mixture till the hard crack stage which is about 300 degree F.  It is removed from heat and baking powder is added to the mixture and whisked till the volume increases and the mixture turns milky in color. The mixture is poured in a greased pan and allowed to cool for at least 2 hours without disturbing.

Additional vanilla or cinnamon flavor can also be added to the candy. It can be eaten as it is or covered with chocolate.

·         Sponge toffee is served as a candy. It can also be given to children as a snack food.

·         Sponge toffee is used as the centre bar for Cadbury’s crunchie and Nestle’s violet crumble.

·         When making this candy one must be very careful as the mixture has a very high temperature.

·         It can be stored in an airtight container for a month.
