Toffee Coffee Topping
|Packed brown sugar||1 Cup (16 tbs)|
|Strong coffee||1 3⁄4 Cup (28 tbs) (hot)|
|Butter||2 Tablespoon (or margarine)|
In a heavy saucepan over low heat, combine brown sugar, cornstarch and salt.
Add coffee and cook, stirring, until thickened.
Remove from heat.
Add butter and vanilla, stirring until well blended.
Drizzle warm over muffins.
