For the caramel sauce, put the sugar and 5 tablespoons water into a heavy pan, stir until the sugar has dissolved, then boil without stirring until golden brown.
Add the rest of the water and blend with the caramel.
Peel, core and slice the apples, put into a dish, add the warm caramel then allow to cool.
Turn over once or twice so the apples absorb the sauce.
