Chocolate Toffee Drops
|Egg whites||4 Large|
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Sifted powdered sugar||1 Cup (16 tbs)|
|Unsweetened cocoa||1⁄2 Cup (8 tbs)|
|English toffee candy bars||2 4⁄5 Ounce, crushed (2 Bars, 1.4 Ounce Each)|
1. Preheat oven to 350°.
2. Beat egg whites in a large bowl with a mixer at high speed until soft peaks form. Gradually add granulated sugar, beating until stiff peaks form.
3. Combine powdered sugar, cocoa, and crushed candy bars in a small bowl, stir well. Gently fold half of cocoa mixture into egg whites (egg whites will deflate quickly). Gently fold in remaining cocoa mixture until smooth. Drop mixture by rounded tablespoonfuls onto a baking sheet coated with cooking spray. Bake at 350° for 15 minutes (cookies will be soft in center). Cool on pan on a wire rack 2 minutes. Remove cookies to rack, and cool completely.
