Cheesy Golden Buck
Melt butter. Set over hot water. Add half the cheese. When melted add remaining cheese. Melt. Then add slightly beaten egg and milk stirring constantly. Blend in mustard and ginger. Season with salt and pepper.
Grate the cheese finely. Put it into a pan with the butter and ale and stir vigorously until creamy. Then add the Worcester sauce lemon juice or vinegar and the eggs previously beaten. Season to taste with celery salt and cayenne pepper and continue stirring
MAKING Take a heavy casserole combine cheese mustard and cornstarch in it and blend on medium flame. Allow the ingredients to boil by stirring till the cheese melts. SERVING Serve the cheese sauce on English muffins topped with poached egg.
