Basil Toast

Basil Toast - cheese and basil combine to form this juicy dish. The basil toast is a common factor for our weekend get-togethers. You will sure love this basil toast - my guarantee!
Ingredients
  Chopped tomatoes 1 Cup (16 tbs)
  Chopped basil 1⁄4 Cup (4 tbs)
  Capers 1 Tablespoon
  Black pepper 1⁄2 Teaspoon
  Italian bread slice 12
  Olive oil 1⁄4 Cup (4 tbs)
  Mozzarella cheese slice 12
Directions

In a small bowl, combine tomatoes, basil, capers and pepper.
Arrange bread slices on an ungreased baking sheet.
Drizzle 1 teaspoon olive oil on each slice.
Using half of the tomato mixture, spoon some on each bread slice.
Top each slice of bread with a slice of cheese.
Spoon remaining tomato sauce over each piece.
Bake, uncovered, in a preheated 375-degree oven 8 minutes, or until bread is hot and cheese is melted.
Watch carefully so it doesn't bum.
