Creamed Tuna On Toast

Ingredients
  Special oil 2 Tablespoon
  Chopped onions 1⁄2 Cup (8 tbs)
  Mushrooms 1⁄2 Pound, sliced
  Flour 1 Tablespoon
  Salt 3⁄4 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Skim milk 1 1⁄2 Cup (24 tbs)
  Canned tuna fish 15 1⁄2 Ounce, drained, flaked (2 Cans, 7 3/4 Ounce Each)
  Toast slices 3 , trimmed and cut in triangles
  Tomatoes 2 , peeled and sliced
  Minced parsley 2 Tablespoon
Directions

Heat the oil in a skillet; saute the onions 5 minutes.
Add the mushrooms; saute 5 minutes longer.
Blend in the flour, salt and pepper; add the milk, stirring steadily to the boiling point.
Cook over low heat 5 minutes.
Mix in the tuna.
Arrange the toast on the bottom of a baking dish; place the tomatoes over it.
Pour the tuna mixture over all.
Bake in a 375° oven 20 minutes.
Sprinkle with the parsley.
