Brunch Eggs Over Toast

Ingredients
  Green bell peppers 3 Large, seeded and coarsely chopped
  Onions 6 Large, coarsely chopped
  Garlic 2 Clove (10 gm), finely minced
  Bacon 1 Pound, fried and diced
  Flour 1 Tablespoon
  Longhorn cheese 1 Pound, grated
  Canned tomatoes 14 1⁄2 Ounce, undrained (1 Can)
  Jalapenos 1⁄2 Can (5 oz), diced (Or 1/2 Small Can)
  Hard cooked eggs 12 , cut into eights
  Toast rounds/Ritz crackers 5
Directions

Saute peppers, onions, and garlic in bacon drippings.
Remove; add flour to drippings.
Stir until smooth.
Add juices, tomatoes, and cheese.
Add eggs, bacon, and jalapenos; stir gently.
Serve over toast or crackers.
