Liver and Onion On Toast
|Vegetable oil||3 Tablespoon (Rapeseed)|
|Onion||1 Large, chopped|
|Chicken livers||450 Gram|
|Freshly ground black pepper||To Taste|
|Toast triangles/Crackers||1 Cup (16 tbs) (For Serving)|
Start by hard-boiling the eggs (in a pan of boiling water for 5 minutes).
Cool, peel and set aside.
Heat 2 tablespoons of the oil in a pan, then add the onion.
Cook for around 4 minutes until slightly caramelised.
Add the chicken livers and cook with the remaining oil for about 4 minutes, ensuring that they remain tender on the inside and are not overcooked.
Put the mixture in a food-processor, together with the eggs, and season well.
Blend but do not puree - keep it a little chunky.
Serve with toast or crackers.
