Cheese Toast Racks
|White bread mix||10 Ounce (1 Packet)|
|Mature cheddar cheese||2 Ounce, finely grated|
|Parmesan cheese||2 Tablespoon|
|Warm water||1⁄3 Pint|
|Butter||1 1⁄2 Ounce|
|Made mustard||1⁄2 Teaspoon|
Tip the bread mix into a bowl. Add the cheeses and mix with the warm water, according to the packet instructions. Knead for 5 minutes. Cut the dough in half, knead lightly and roll out each half to a 23 cm (9 inch) square.
Melt the butter with the mustard and brush half over the squares. Cut each square into 5 strips and stack these on top of each other. With a sharp knife, cut both stacks into four. Hold each quarter, cut side uppermost, and pinch the bases together. Press down well into greased deep bun tins. Prove, covered, in a warm place for about 45 minutes or until doubled in size.
Brush with the remaining butter mixture and bake in a preheated hot oven (220°C/425°F, Gas Mark 7) for about 25 minutes or until they sound hollow when tapped. Makes 8
