Turkey With Hazelnuts On Toast

Ingredients
  Whole grain bread slice 4
  Butter 2 Teaspoon
  Smoked turkey breast slices 1⁄2 Pound (8 Pieces)
  Carrots 1⁄2 Pound
  Chester cheese 2 Ounce
  Hazelnuts 1⁄2 Cup (8 tbs)
  Freshly ground white pepper 1⁄8 Teaspoon
  Eggs 2
  Lemon juice 1 Tablespoon
  Blue cheese 2 Ounce
  Fresh parsley/Cress 1 Tablespoon
Directions

Toast the bread slices and set aside to cool, then spread with butter and cover each with a slice of turkey breast.
Preheat the oven to 350°.
Wash, peel and grate the carrots.
Dice the cheese and chop the hazelnuts.
Mix the carrots, cheese and hazelnuts together and season them with the pepper.
Mix in the eggs and the lemon juice.
Spread the mixture on the bread and top with a small slice of blue cheese.
Toast the sandwiches in the oven until the carrot mixture has solidified and the top is golden brown.
