Clams On Toast

Ingredients
  Shucked clams 1 Cup (16 tbs), minced
  Butter 2 Tablespoon
  Flour 2 Tablespoon
  Milk 1 Cup (16 tbs)
  Chives 1 Teaspoon, chopped
  Heavy cream 1 Cup (16 tbs)
  Cayenne pepper To Taste
  Dry toast 2
Directions

1. Simmer the clams in their own juice five minutes. Grind, using the finest knife of a food chopper.
2. In a saucepan melt the butter, add the flour and stir with a wire whisk until blended. Meanwhile, bring the milk to a boil and add all at once to the butter-flour mixture, stirring vigorously with the whisk until the sauce is thickened and smooth.
3. Add the chives, cream, cayenne and clams and reheat.
