Shad Roe With Toast Points

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Shad roe 2 Pound
  Bread slices 3
  Ground black pepper To Taste
  Lemon slices 2
  Parsley 1⁄2 Cup (8 tbs), chopped
  Salt To Taste
Directions

1. In a ten-inch skillet melt the butter until warm but not hot. Arrange the fresh roe in it, cover the pan and cook over low heat, turning once, until tender, about twelve minutes. Add more butter if necessary.
2. Toast the bread and cut diagonally in half. Arrange the toast on a warm platter and place the roe on top. Season with salt and pepper, garnish with lemon slices and sprinkle generously with parsley.
