|Pork fat||30 Gram, finely minced|
|Peeled prawns||200 Gram, finely minced|
|Corn flour||1 Tablespoon|
|Egg white||1 , lightly beaten|
|White pepper||To Taste|
|White bread slices||3 , crusts removed|
|Sesame seeds||125 Gram|
|Vegetable oil||625 Milliliter|
In a bowl, mix together fat, prawns, salt, cornflour (cornstarch) and egg white.
Season with white pepper.
Spread on to one side of each slice of bread.
Coat with a thick layer of sesame seeds, and press well into the spread.
Cut each slice into 4 triangles.
In a wok, heat oil until smoking, reduce heat slightly, then carefully lower in the fingers, coated side down.
Deep fry for 2-3 minutes until golden brown.
Drain on absorbent kitchen paper.
