Betty demonstrates how to make Feta Walnut Nibbles. This is a healthy appetizer that is great for Memorial Day!
English walnut halves | 40 | |
Butter | 1 Tablespoon | |
Salt | To Taste | |
Cream cheese/Neufchatel cheese | 3 Ounce , softened | |
Feta cheese crumbles | 1/4 Cup (4 tbs) | |
Finely chopped fresh parsley | 2 Tablespoon |
MAKING
1. In a medium sized skillet, melt butter over low flame. Add English walnut halves and salt. Lightly toast the walnuts and remove from heat. Let cool.
2. In a separate bowl, mash the feta cheese and mix well with the cream cheese.
3. Spread one walnut half with enough cheese mixture to allow a second half to stick to it and cause the mixture to extend beyond the edge slightly.
4. Roll edges in chopped fresh parsley. Place on a lined baking tray, cover, and refrigerate until ready to serve.
SERVING
