Jalapeno Tilapia with Whole Wheat Linguini and Lemon Butter

I use fresh Jalapenos from our pepper garden and whole wheat linguini.
  All purpose white flour 1 1⁄2 Cup (24 tbs)
  Fresh spinach 3 Cup (48 tbs), de-stemmed
  Fresh parsley 3 Teaspoon
  Lemon juice 1 1⁄2 Tablespoon
  Tilapia fillets 4 Ounce
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Butter 3⁄4 Cup (12 tbs), melted
  Garlic 3 Teaspoon, minced
  Jalapeno 3⁄4 Cup (12 tbs), minced
  Spinach 3 Cup (48 tbs) (De-Stemmed)
  Salt 3 Pinch
  Pepper 3 Pinch
  Garlic salt 3 Pinch
  Heavy cream 1 1⁄2 Cup (24 tbs)
  Lemon butter 3⁄4 Cup (12 tbs)
  Linguini 15 Ounce
  Parsley 3 Teaspoon (Use Fresh)
  Diced roma tomato 1⁄2 Cup (8 tbs)
  Butter 1⁄2 Cup (8 tbs)
  Juice of lemon 1 1⁄2 Tablespoon
  Parsley 1 1⁄2 Tablespoon, chopped
  Salt 3⁄4 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon

Dredge the Tilapia fillets in the flour.

In a heavy bottom skillet, melt the butter and add the garlic. Add the Tilapia and cook over medium heat. Once the Tilapia has finished cooking on one side, flip the fillets over, sprinkle the fillets with the salt, pepper and garlic salt.

Add the Jalapenos, and spinach.

Prepare the linguini in boiling water, and allow it to cook for 3 to 5 minutes depending on how you like the doneness of your linguini.

As the fillets begin to flake, add the heavy cream and bring to a slight boil. Add the lemon butter and parsley to the sauce and stir.

Place the linguini on a plate and place a fillet on top and spoon some of the sauce and spinach over the linguini.

Garnish with Roma tomatoes and fresh grated Parmesan Cheese.

Directions for the Lemon Butter:


In a small saucepan over medium heat, melt butter. Stir in lemon juice, chopped parsley, aslt and cayenne pepper. Set aside.
