Ingredients
  Lemongrass stalk 2 , cut into 1/2-in/1-cm pieces (Citronella, Bottom Part Only)
  Sliced galangal/Fresh ginger 1 Tablespoon (Kha)
  Cumin 1 Teaspoon
  Fresh cilantro 1⁄2 Cup (8 tbs) (Coriander Root, Rak Phak Chi)
  Garlic 8 Clove (40 gm)
  Thai chili peppers To Taste (Green Variety, Phrik Khi Nu)
  Jalapeno peppers 10 (Phrik Chi Fa)
  Shrimp paste 1 Teaspoon (Kapi)
  Minced kaffir lime skin 1⁄4 Teaspoon (Phio Ma Krut)
  Coconut milk 2 Cup (32 tbs) (16 Fl Oz, 500 Ml)
  Beef 1 Pound, cut into 1-cm x 2.5-cm (450 Gram)
  Fish sauce 1⁄4 Cup (4 tbs) (2 Fl Oz, 60 Ml, Nam Pla)
  Chopped shallot 1 Tablespoon
  Sugar 3 Tablespoon
  Thai eggplant/Tinned bamboo shoots 1 Cup (16 tbs) (Ma-Khuea Phuang)
  Coconut cream 1⁄2 Cup (8 tbs) (4 Fl Oz, 125 Ml)
  Kaffir lime leaves 6 (Bai Ma-Krut)
  Sweet basil 1⁄4 (Bai Horapha)
  Jalapeno pepper 1 (Red, Phrik Chi Fa Daeng, For Garnish)
Directions

ace all the green curry paste ingredients in an electric blender and process until smooth, or pound in a mortar. Pour the coconut milk and green curry paste into a large saucepan and heat till boiled. Add the beef, fish sauce, and sugar. Cool at a slow boil for 5 minutes. Add the eggplant and simmer for 2 minutes. Add the coconut cream and stir to combine. Add the kaffir lime leaves and basil leaves. Remove the contents into a serving bowl and garnish with red pepper

Phrik chee fa are the long skinny Thai dragon chiles, phrik kee nu are the small bird chiles, Phrik kee nu kaset are the serrano chiles, and phrik yuak are the banana peppers.
