Add 1 tablespoon of salt to the chopped ginger. Mix the salt through the ginger with your hands. Mix well for about one minute then rinse in a strainer with clean water to rinse away salt. This will take the hot bite out of the ginger but will still be have a very good spicy taste to it. Grind the pepper until it it fine then add the garlic and grind the pepper and garlic together. Becareful it doesn’t burn when added to the hot oil.
