Lemongrass Cooler

A lovely way to cool down on a hot summer day, this sweet, fragrant iced cooler is a sure winner. This combination of lemongrass, fresh mint and tea is very cooling and refreshing. Sip on it slowly and you will feel your energy coming back.
Ingredients
  Lemongrass 1 Bunch (100 gm), rinsed (and knotted)
  Palm sugar/Sugar 1⁄2 Cup (8 tbs) (to taste)
  Tea bags 4 Medium
  Water 500 Milliliter
  Green food coloring 2 Drop (Optional)
  Fresh mint leaves 6 Medium
  Lemon juice 2 Tablespoon
Directions

MAKING
1. In a large pot combine water, knotted lemon grass, sugar, water, fresh mint leaves and tea.
2. Bring it to a boil and then lower the heat and simmer for 30 minutes or until the tea and lemon grass flavor gives strong aroma.
3. After 30 minutes strain the lemon grass drink and discard the leaves and tea.
4. Pour few drops of green food coloring and lemon juice and stir allow the drink to cool at room temperature.
5. Once done transfer in a container and refrigerate to chill.

SERVING
6. Serve the Lemongrass Cooler with crushed ice.

NOTE
Adjust the sweetness to taste.
Use tea bags depending on how strong you want the cooler.

Story
We have abundance of lemongrass in our farm and they grow upto 5 feet in height. So obviously we would not let the fragrant plant go in waste. I had this cooler in Thailand and loved it so much that I had got lemongrass from there, this was before marriage. So when I got married I was taken to my in-laws farmhouse and when I saw the lemongrass growing wildly I was thrilled to make this cooler once again. This is my take on the cooler you can enhance the flavor with ginger and honey as well. Try it!
