Vegan Pad Thai for two just in time for Valentine's Day!
Ingredients
  Olive oil 1⁄4 Cup (4 tbs)
  Garlic cloves 2 , shredded
  Coriander 1⁄2 Teaspoon
  Crushed red pepper flakes 1⁄4 Teaspoon
  Sugar 3 Tablespoon
  Onion powder 1 Teaspoon
  Cider vinegar 1⁄2 Teaspoon
  Tofu 1⁄2 Cup (8 tbs), baked
  Veggie broth 1 1⁄4 Cup (20 tbs)
  Cabbage 1⁄4 Cup (4 tbs), shredded
  Carrot 1⁄4 Cup (4 tbs), shredded
  Sea salt 1⁄2 Teaspoon
  Vegan worcestershire sauce 1 Teaspoon
  Rice noodles 1⁄2 Pound, cooked
For garnishing
  Fresh basil leaves 5 , sliced
  Sprouts 1 Tablespoon
  Peanuts 1 Tablespoon, crushed
Directions

MAKING
1. In a pan heat olive oil over low heat, add coriander, crushed red pepper and onion powder, mix. Stir in the sugar.
2. Add vinegar, garlic, stir for about 2 minutes. Add tofu and pour in the veggie broth. Bring to a boil, reduce the heat, allow to slightly thicken.
3. Add cabbage and carrot, cook until it softens. Add the noodles, Vegan Worcestershire Sauce, salt, lime juice and mix.

SERVING
4. Garnish with sprouts, peanuts and basil, serve.
