Ingredients
  Lean ground beef/Chicken / pork / turkey 2 Pound
  Water 1 1⁄2 Cup (24 tbs)
  Fish sauce 4 Tablespoon
  Lime juice 1⁄2 Cup (8 tbs), freshly squeezed
  Limes 2
  Ground roasted rice 3 Teaspoon
  Ground roasted dried chili peppers 1 Teaspoon
  Red onion 1⁄4 , sliced
  Green onion 4 , sliced
  Cilantro 3⁄4 Bunch (75 gm), sliced
  Spearmint leaves 1⁄2 Cup (8 tbs)
  String beans 1 Cup (16 tbs)
  Red cabbage/White cabbages 1 Cup (16 tbs)
Directions

GETTING READY
1 In a pan, roast 1 cup of uncooked rice over medium heat, stirring constantly until lightly brown.
2 In another pan, roast 1 cup of chili peppers over medium heat, stirring constantly until lightly burnt.
3 Using a food processor, grind the rice until it reaches the consistency of fine sand.
4 In the food processor jar, grind the roasted chili peppers.

MAKING
5 In a pan, heat bout 1 1/2 cup water and bring to a boil.
6 Gradually add in the ground meat and cook thoroughly.
7 Remove the pan from the heat and stir in the ground rice and chili peppers.
8 Add in the fish sauce and lime juice, mix well.
9 Add in the diced green onion and diced red onion.
10 Mix in the diced cilantro and spearmint.
11 You can choose to add laotian parsley, however, it is optional.
12 Mix well so that the ingredients can combine well.

SERVING
13 Serve along with raw cabbage slices.

Our favourite is Laab Gai (using chicken in place of the beef). Just follow their recipe and use skinless boneless chicken mince. Remember a salad is always the hottest of a Thai meal. The roasted rice (Khao Kua Pon) gives a special flavour to dishes from Issan/Northeast Thailand. You can buy the roasted rice at SE Asian markets in a bottle and it works fine, but it is easy to make. Use a good quality fish sauce/nam pla like Golden Boy or Dragonfly. What she calls Laos Parsley is also known as Pak Chee Farang and is often found in Ssian markets, or in Mexican Markets where it is called Culantro. Laab is also wonderful to serve in lettuc cups of Boston Bibb leaf or even iceberg if you prefer. Sticky rice is soaked, then steamed in a bamboo cone over boiling water covered with a damp towel. I adore Thai food and have traveled to the Kingdom of Thailand 30+ times. I am the ThaiFoodEditor on Bellaonline.com

I like thai food very much. Thai Cuisine is known for its balance of five fundamental flavors in each dish or the overall meal - hot (spicy), sour, sweet, salty and bitter (optional). I think this spicy ground beef is a great example of thai cuisine. I will try it. Thanks for posting this nice spicy ground beef recipe.
