Thai Chicken Fried Rice With Basil
|Cooked jasmine rice/Long grain rice||4 Cup (64 tbs), cooled|
|Garlic cloves||6 Large|
|Thai chili peppers||4 (Red And Green Colored)|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Chicken||1 1⁄2 Pound, cut into bite sizes|
|Oyster sauce||3 Tablespoon|
|Fish sauce||2 Tablespoon|
|Red bell pepper||1 Medium, cut into julienne|
|Fresh basil leaves||2 Cup (32 tbs)|
|Cucumber||1 , cut into bite sizes|
|Cilantro sprigs||1⁄2 Cup (8 tbs) (For Garnish)|
1 In a deep pan or wok, heat oil over high heat until it starts to smoke.
2 Add in the crushed garlic and crushed chili peppers.
3 Stir quickly making sure they don not burn.
4 Add in chicken pieces at once.
5 Stir well.
6 Add in the oyster sauce, fish sauce and sugar.
7 Cook, stirring until the chicken is cooked through.
8 Add in the cooked rice.
9 Stir quickly to blend the sauces with rice.
10 Add in the red bell pepper, stirring constantly.
11 Add in the basil leaves while stirring.
12 Remove from the heat.
13 Serve at once garnished with sliced cucumbers and cilantro sprigs.
