Thai Mint Ginger Chicken

Ingredients
  Boneless chicken breast 1 1⁄2 Pound, cut into 1/2-inch cubes
  Flour 2
  Fish sauce 2 Tablespoon
  Dark soy sauce 2 Tablespoon, divided
  Ginger piece 1 1⁄2 Inch, peeled
  Green chilies 2 , chopped
  Vinegar 1 Tablespoon
  Sugar 1 Tablespoon
  Lime 1 , peel grated and juice divided
  Cabbage 3 Cup (48 tbs), chopped
  Green onions 4 , chopped
  Fresh mint 1⁄4 Cup (4 tbs), chopped
Directions

MAKING
1) In a medium bowl place chicken.
2) Sprinkle with flour, turning to coat well.
3) Mix the fish sauce and 1 tablespoon of the soy sauce; set aside.
4) Put ginger in a blender or food processor and mince for about 30 seconds.
5) Add chilies, remaining 1-tablespoon soy sauce, vinegar, sugar and 1/2 teaspoon grated lime peel.
6) Blend or process for about 1 minute and set aside.
7) In a wok or Dutch oven over high temperature, pour oil.
8) Add chicken, onion and cabbage; stir-fry for about 4 minutes or until chicken turns white.
9) Pour ginger sauce mixture over chicken and continue to stir-fry over high heat for about 2 minutes or until sauce thickens.

SERVING
10) Sprinkle with lime juice and top with mint.
11) Serve hot with rice.
