Thai Fried Noodles With Prawns

Ingredients
  Egg vermicelli 8 Ounce (1 Packet, 250 Gram)
  Vegetable oil 2 Tablespoon
  Thinly sliced radishes 4 Ounce (125 Gram)
  Lemon juice 4 Tablespoon
  Caster sugar 1 Tablespoon
  Anchovy extract 2 Teaspoon
  Chili powder 1 1⁄2 Teaspoon
  Prawns 6 Ounce, peeled cooked, drained, and thoroughly dried if frozen (175 Gram)
  Dill sprigs 6 (Or Use As Needed To Garnish)
Directions

MAKING
1. In a large pan, boiling salted water and cook the vermicelli following instructions in the packet.
2. Cook until just tender.
3. Drain the vermicelli.
4. In a heated wok, heat oil over moderate heat until hot.
5. Add radishes and stir-fry over high heat for 30 seconds.
6. Pour lemon juice and add sugar, anchovy extract and chilli powder.
7. Stir-fry for 1-2 minutes.
8. Add prawns and stir-fry for 30 seconds until heated thoroughly.
9. Add vermicelli to the prawn mixture.
10. Stir fry and toss over a high heat until evenly mixed.

SERVING
11. Garnish with dill sprigs.
12. Serve hot.
