Stir Fried Chicken Pad Thai

Ingredients
  Noodles 250 Gram (Straight To Wok Thai Ribbon)
  Groundnut oil 2 Tablespoon
  Garlic 2 Clove (10 gm), chopped
  Pepper red 1 , finely sliced
  Red onion 2 , finely sliced
  Carrots 2 , coarsely grated
  Red chilies 2 , deseeded and chopped
  Ginger 1 Inch, peeled and finely grated (1 Small Piece Ginger)
  Peanuts 4 Tablespoon, lightly crushed
  Fish sauce 2 Tablespoon
  Lime juice 1
  Soft light brown sugar 2 Teaspoon
  Eggs 2
  Bean sprouts 125 Gram
  Chopped coriander 4 Tablespoon
  Unsalted peanuts 115 Gram, chopped
  Chicken fillets 2 , finely sliced
  Spring onion 4 , finely sliced
  Tomato ketchup 2 Tablespoon
Directions

In a non stick pan, heat a little oil and make two thin omelettes with the beaten eggs.
Allow the omelettes to cool and finely shred them.
Heat the oil in a wok and stir fry the chicken for 4-5 minutes.
Add the chilli, garlic, ginger,peppers, onions and carrot and cook for 3-4 minutes.
Add the noodles and give a good toss, then cover the wok with a lid or a large sheet of tin foil. Cook for 1-2 minutes, this allows the noodles to soften.
Mix together the fish sauce, lime juice, tomato ketchup and sugar.
Add the fish sauce mix to the wok.
Stir in the bean sprouts, spring onions and omellete.
Heat for 30 seconds, tossing a few times.
Serve in a bowl and Sprinkle with the coriander and peanuts.
