1 Inch, peeled and finely grated (1 Small Piece Ginger)
4 Tablespoon, lightly crushed
Soft light brown sugar
115 Gram, chopped

In a non stick pan, heat a little oil and make two thin omelettes with the beaten eggs.
Allow the omelettes to cool and finely shred them.
Heat the oil in a wok and stir fry the chicken for 4-5 minutes.
Add the chilli, garlic, ginger,peppers, onions and carrot and cook for 3-4 minutes.
Add the noodles and give a good toss, then cover the wok with a lid or a large sheet of tin foil. Cook for 1-2 minutes, this allows the noodles to soften.
Mix together the fish sauce, lime juice, tomato ketchup and sugar.
Add the fish sauce mix to the wok.
Stir in the bean sprouts, spring onions and omellete.
Heat for 30 seconds, tossing a few times.
Serve in a bowl and Sprinkle with the coriander and peanuts.
