Mussels with Thai Herbs
|Mussels||2 1⁄4 Pound, cleaned and beards removed (1 Kilogram)|
|Lemon grass stalks||2 , finely chopped|
|Shallots||4 , chopped|
|Kaffir lime leaves||4 , roughly torn|
|Red chilies||2 , sliced|
|Fish sauce||15 Milliliter (1 Tablespoon)|
|Lime juice||30 Milliliter (2 Tablespoon)|
|Spring onions||2 , chopped|
|Coriander leaves||4 (For Garnish)|
1. Put all the ingredients, except the spring onions and coriander, in a large saucepan and stir Thoroughly.
2. Cover and cook for 5-7 minutes, shaking the saucepan occasionally, until the mussels open. Discard any mussels that do not open.
3. Transfer the cooked mussels to a serving platter.
4. Garnish the mussels with chopped spring onions and coriander leaves. Serve immediately.
