1. In a wok preheat the oil.
2. In a large bowl, mix together all the ingredients for batter.
3. Dip the banana and sweet potato slices in the batter, top on the sides of bowl to remove excess batter and put it in hot oil and deep fry for 8 to 10 minutes or until golden brown in colour.
4. Remove the fritters from oil and drain on the rack to drain excess oil.
