Ingredients
  Sliced peeled cucumber 4 Cup (64 tbs) (About 3 Medium Cucumbers)
  Thinly sliced red onion 1 Cup (16 tbs)
  Thinly sliced fresh mint leaves 1⁄4 Cup (4 tbs)
  Grated lemon rind 1 Tablespoon
  Lemon juice 1⁄4 Cup (4 tbs)
  Sugar 2 Tablespoon
  Grated peeled ginger 2 Tablespoon (Fresh)
  Rice wine vinegar 2 Tablespoon
Directions

1. Combine all ingredients; toss gently to coat. Cover and chill 1 hour, stirring occasionally.
