Pad Thai is the Most Famous Noodle Dish in Thailand
  Rice noodles 250 Gram (8 Ounce)
  Oil 3 Tablespoon
  Onion 1⁄2 Cup (8 tbs), sliced
  Carrot 1⁄2 Cup (8 tbs), grated or julienned
  Garlic 3 Clove (15 gm), minced
  Large shrimp 12
  Fish sauce 60 Milliliter (1/4 Cup/ 2 Fluid Ounce)
  Sugar 60 Gram (1/4 Cup/ 2 Ounce)
  Tamarind juice 2 Tablespoon (ma-kaam piag)
  Paprika/Crushed hot chile flakes 1 Tablespoon
  Egg 1 , beaten
  Scallions 1⁄4 Cup (4 tbs), chopped
  Roasted peanuts 60 Gram, ground (1/4 Cup/ 2 Ounce)
  Bean sprouts 1 Cup (16 tbs)
  Cilantro 2 Tablespoon, chopped
  Lime wedges 2

First you need to soak the rice noodles by covering in some hot water for about 20 minutes
Heat the oil in the pan and add the onion, carrots and shrimp
Once the carrots and onions start to get softened and the shrimp turn pink
add the garlic and a touch of salt, paprika (and pinch of crushed chile pepper if you like it spicy)
Now add the Fish Sauce, Tamarind Juice and Sugar, add bring up to a boil
Crack your egg and let it cook then scramble it in to the sauce
At this point add the cilantro and drained rice noodles
toss around getting the noodles coated with sauce and nice and hot
The sauce should be absorbed by the noodles and almost dry
and at the last minute toss in the bean sprouts
serve topped with toasted peanuts and chopped scallions
a little more fresh bean sprouts if you like the fresh crunchy flavor as well
Serve with Lime Wedges on Top or On the Side

This dish was introduced and made popular as a national dish by Luang Phibunsongkhram when he was Prime Minister during World War II, partly for his nationalism campaign, and partly for a campaign to reduce rice consumption in Thailand at a time when the government faced a major budget crisis. He was helped in this regard by the famous aristocrat, Prapavee Kunuchit. Outside of Thailand, Pad Thai is one of the best-known Thai dishes, and is very popular in Thai restaurants in America and Australia.
