Palm sugar/Brown sugar | 2 Tablespoon | |
Thai chili | 2 , finely chopped | |
Fresh lime juice | 1 Tablespoon | |
Rice vinegar | 1 Teaspoon | |
Garlic cloves | 2 | |
Ginger | 1/2 Inch , peeled and smashed | |
For the peanut sauce | ||
Unsweetened coconut milk | 1 Cup (16 tbs) | |
Agave nectar | 1/2 Cup (8 tbs) | |
Soy sauce | 2 Tablespoon | |
Peanut butter | 1 Cup (16 tbs) | |
Lime juice | 1 Tablespoon | |

For assembling the sandwich | ||
Red cabbage | 1/2 Cup (8 tbs) , thinly sliced | |
Soy bean sprouts | 1/4 Cup (4 tbs) | |
Shredded carrot | 2 Tablespoon | |
Chopped cilantro | 1 Tablespoon | |
Mint leaves | 1 Tablespoon | |
Thai basil | 2 Tablespoon | |
Fresh papaya | 2 Tablespoon , diced | |
Grape tomatoes | 1/2 Cup (8 tbs) , sliced | |

GETTING READY
In a large bowl combine oyster sauce, soy sauce, sesame oil, fish sauce, palm sugar, thai chilis, fresh lime juice, rice vinegar, garlic cloves and ginger. Mix well to combine all the ingredients.
Place the beef short ribs in a container and pour this marinade over it Allow to marinate for several hours.
Preheat the grill.
MAKING
Meanwhile, in a food processor combine all the ingredients for the peanut sauce and blend until smooth.
In a large bowl,combine all the ingredients for the thai salad and toss well.
Place the marinated shortribs on the grill and allow to cook. Flip and cook on the other side as well. Once done, allow the short ribs to cool slightly.
Slice the beef across the grain.
Slit the bread roll and arrange the beef slices on the bottom half of the bread roll. Top with some Thai salad. Drizzle with the remaining marinade and the prepared peanut sauce.
SERVING
Cut the sandwich In half and serve.
