Pork Tenderloin With Apples And Sweet Potatoes

Ingredients
  Packed brown sugar 1⁄4 Cup (4 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  Cider vinegar 1 Tablespoon
  Salt 1 Teaspoon
  Garlic powder 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Red cooking apples 2 Medium, sliced to make about 2 cups
  Sweet potatoes 2 Medium, peeled, thinly sliced to make about 2 1/2 cups (Dark Orange Variety)
  Onion 1 Medium, chopped to make 1/2 cup
  Pork tenderloins 2 Pound (2 Pieces, 1 Pound Each)
Directions

GETTING READY
1 Heat the oven to 425 degrees farenheit.

MAKING
2 In a medium bowl mix brown sugar,butter,vinegar,salt,garlic powder and pepper.Keep 2 tablespoons of this mixture aside.
3 Add apples,sweet potatoes and onion to the butter mixture.Toss to coat.
4 In a roasting pan or 13x9 inch (3 quart) glass baking dish, spread the apple mixture.Cover tightly with foil and bake for 20 minutes.
5 In the meantime,brush pork with the reserved butter mixture.
6 Heat a 10-inch nonstick skillet over medium high heat.Cook pork in the skillet for about 3 minutes turning ocassionally to brown all the sides evenly.
7 Place pork on the apple mixture and bake uncovered for 30-40 minutes or till the pork has a slight blush of pink in the centre.

SERVING
8 Serve hot.
