  • At the time of adding to the pasta, if you find that the sauce has to thicken, whisk in one teaspoon of butter over medium heat, stirring constantly. The milk and protein component in the butter form an emulsion, suspending the fat particles of the liquid thereby making it thicker.

  • While preparing the sauce, add freshly grated Parmeggiano Reggiano or fresh mozzarella cheese and allow it to simmer. This technique thickens sauce.

  • Cubed cream cheese is another way to thicken the  sauce. Similar to the tip mentioned above, the cheese should be added at the time of simmering, and the richness of the cream will thicken the sauce.

  • Egg yolks can pitch in to thicken Alfredo sauce. First, temper the yolks by whisking it with the pasta water; then take a tablespoon full of the sauce and slowly pour it over the tempered egg yolks, whisking it constantly, and allow this mixture to simmer till the sauce thickens.

  • Adding roux to the Alfredo sauce can also be a good thickening agent. The roux can be prepared simultaneously, with equal amounts of butter and flour and cooked for a minute. Stir in the roux to the sauce on simmer.

  • Corn Flour or even arrowroot powder can be used to thicken Alfredo sauce though it should be mixed with cold water first, and then this mix is added to the sauce on simmer while stirring constantly. Stirring is important so as to avoid formation of lumps.


Additionally, it is important to remember that when starch-based thickening agents are used, you have to ensure that be it the broth or the sauce, it should be properly cooked lest it leaves behind a starchy flavor.
