With the increasing popularity of sushi it is no wonder that many want to recreate the flavors of sushi rice right at home and trust me, it is not such a difficult task. I have been trying to make sushi rice at home since I first tasted it and here are a few tips on how to prepare easy sushi rice at home and a simple sushi recipe. I am sure that once you read through this recipe you will not wait too long to cook up this wonderful delicacy right at home!
If you want to make good sushi rice then you have to get your hands on the right kind of rice and also cook it right. When you go to the market either ask for sushi rice or select the Japanese short grain rice. The Japanese Long Grain rice will give you a messy sushi roll as they will not have the consistency or the sweetness of sushi rice. Sushi Rice has a balanced composition of starches like amylose and amylopectin that allows the rice to keep together to form a perfect sushi roll.
Though you can follow the instructions on the packet it is generally an accepted rule in Japanese kitchens that equal parts of rice and water should be used while cooking sushi rice.
Ensure that the rice is washed extremely well before cooking it in the cooker or oven and remember than one cup of uncooked sushi rice will give you two cups of cooked sushi rice.
While the rice is cooking prepare your seasoning so that by the time the rice is cooked the seasoning would have cooled down to room temperature. Usually for sushi rice, a vinegar based seasoning is used.
Once the rice is cooked, empty it into a stainless steel bowl while it is still hot and then mix in the seasoning little by little. Mix the seasoning by cutting and folding like you would do for your cake batter. This is to ensure that the sushi rice is not crushed and made into a paste.
Cool the rice to room temperature by alternatively folding and fanning it. You can also simply spread out the cooked rice on a cookie sheet or baking pan for it cool down. Do not use aluminum sheets as aluminum and acidic components like vinegar often react.
Once the rice has cooled cover it with a moist paper towel or hand towel so that the upper layer wonât dry out and harden and the moisture level is maintained.
To make things even more easy you can purchase those kits available at grocery stores that have all the seasonings and equipments required to make easy sushi rice and prepare your sushi rolls in very little time. But I prefer the original stuff. You can also westernise it if required.

In both the methods prepare the seasoning by mixing and then heating vinegar, mirin, sugar, and salt until the sugar dissolves when the rice is cooking. To give the sushi rice a shiny look you can cool the rice by using a fan while you are folding and mixing the rice.
Try and use the sushi rice immediately or the same day as sushi rice doesnât keep well in the refrigerator or freezer.
