How to make barbecue chicken
Barbecue chicken – one of the most popular BBQ foods, is by principle a quick and easy dish to prepare, yet many have had to face bad BBQ days with undercooked or charred chicken. Here are some tips and suggestions on how to make barbecue chicken, which will help you to cook perfectly grilled, succulent BBQ chicken, and avoid embarrassing moments at your BBQ table.
There are several ways to barbecue chicken, pre-cooking the chicken before grilling it, cooking the chicken directly over an outdoor barbecue grill, using an indoor grill pan, and more. I am going to explain each one of these:
• Cooking over an indoor grill pan: This is by far the simplest of all methods. All you need is a pan, some BBQ sauce, and chicken legs. First pour some BBQ sauce into your pan and place it over the grill. Allow the BBQ to warm up a bit, now place the chicken (legs or breast) into the sauce and cook over medium high heat for 30 mins. Keep turning the chicken to make sure that the chicken cooks well on all sides and the BBQ sauce is coated all over. The chicken is done when it turns white all over with no pink spots. Alternately you can use a meat thermometer and cook the chicken till the internal temperature reaches 174oF. Your BBQ chicken is ready to be served.
• Pre-cooking the chicken before grilling: Undercooked chicken is a major source of food borne diseases. Pre-cooking the chicken before grilling it significantly reduces the risk of salmonella related illnesses. For pre-cooking, marinate the chicken for 60mins at room temperature (ifood.tv has some interesting BBQ chicken marinade recipes) and bake it in an oven at 350oF till the chicken is completely done. Now to finish the dish place the baked chicken on a pre-heated grill and brush with BBQ sauce. Since the chicken is already cooked, you need to grill the chicken on low heat for just 10mins – to allow the sauce to caramelize and give a nice glaze to the chicken.
• Cooking directly over an outdoor grill: This method gives the most authentic barbecue chicken. For this you need to first make 3 – 4 deep slashes across the chicken, this will allow the chicken to soak in all the flavors from the marinade. Now marinate your chicken in your favorite marinade recipe or you can just soak the chicken in light brine for 60mins at room temperature. Marinating enhances the moistness of the chicken. Once marinated, pat the chicken dry and dust it with a BBQ dry rub of your choice, salt and pepper is the most commonly used BBQ rub. This process enhances the flavors of the chicken. Now place the chicken skin side down over a hot pre-heated grill (the grill temperature should be at least 300oF to 350oF) and cook for just 3mins to 4mins and flip it over. The chicken is more susceptible to charring on the skin side, so cook this side down for a real short time, so that the skin gets the lovely grill marks but does not burn. Now continue to grill with the skin side up with the grill vents closed. After 25 mins brush the chicken with BBQ sauce and cook it with the grill vents opened for 10 more mins. The chicken is ready then there are not pinks spots seen, the BBQ sauce has caramelized, and the internal temperature is 175oF.
