Lemon tea is a strong black tea which is brewed in a metal pot on a burner for a long time. Its ingredients include simple syrup, hot tea and ice cubes. Slices of lemon are placed on the top of the tea when it is served. These slices are mixed into the tea when it is drunk so as to make sure that the taste of the floral volatile oils in the lemon peel remain at its peak. It is very commonly served at the restaurants in Hong Kong.
