Lemon Grass Tea

Healthycooking's picture
There is nothing like this Lemon Grass Tea to start off a day in a healthy way! I have substituted sugar for jaggery and also have spiced the tea, which makes it lot more flavorful and inviting! Give it a try and you will never settle for a plain version ever!
Chopped lemon grass 1 Cup (16 tbs)
  Cardamom 2 , crushed
  Cloves 3
Fresh ginger/Dried ginger powder 1 teaspoon 2 Inch
Turmeric root piece/Turmeric powder 1 teaspoon 1 Inch
  Coriander seeds 1 Teaspoon
  Cumin seeds 1 Teaspoon
  Ajwain 1 1⁄4 Teaspoon
Black pepper corns 1 1⁄4 Teaspoon
  Jaggery To Taste

Put all these ingredients, except the jaggery, in 6 cups of water ana boil till reduced to half the quantity.
After it comes to a boil let the tea simmer, do not cook on a high flame.
This is best for infusing the essences of the various ingredients.
Add the jaggery and take off flame.
Ideally you should have this fresh but for purposes of convenience you can store the decoction in the refrigerator and reheat before consuming the next day
