Prawns with Fragrant Tea
|Egg white||1 , lightly beaten|
|Dry sherry/Shaoxing wine||2 Teaspoon|
|White pepper||1 Pinch|
|Raw shrimp||3⁄4 Pound, peeled, leaving tail intact and deveined|
|Chicken broth||1⁄4 Cup (4 tbs)|
|Dry sherry/Shaoxing wine||1 Tablespoon|
|Ground chinese oolong tea||1 1⁄2 Teaspoon (Use High Quality Tea)|
|Mint leaves||4 (For Garnish)|
Combine marinade ingredients in a bowl.
Add shrimp and stir to coat.
Set aside for 30 minutes.
Cooking Place steaming rack in a wok.
Pour water to just below level of rack and bring to a boil.
Place shrimp in a heatproof dish and set dish on rack.
Cover and steam for 7 minutes or until shrimp feel firm and turn pink.
While shrimp are steaming, combine broth, wine, tea, sugar, and pepper in a small saucepan and bring to a boil; reduce heat and keep warm.
To serve, pour sauce in center of a round platter.
Arrange shrimp on sauce.
Garnish with mint leaves.
