Prawns With Fragrant Tea

Ingredients
For marinade
  Egg white 1 , lightly beaten
  Cornstarch 2 Teaspoon
  Dry sherry/Shaoxing wine 2 Teaspoon
  Salt 1⁄4 Teaspoon
  White pepper 1 Pinch
  Raw shrimp 3⁄4 Pound, peeled, leaving tail intact and deveined
  Chicken broth 1⁄4 Cup (4 tbs)
  Dry sherry/Shaoxing wine 1 Tablespoon
  Ground chinese oolong tea 1 1⁄2 Teaspoon (Use High Quality Tea)
  Sugar 1⁄4 Teaspoon
  Mint leaves 4 (For Garnish)
Directions

Combine marinade ingredients in a bowl.
Add shrimp and stir to coat.
Set aside for 30 minutes.
Cooking Place steaming rack in a wok.
Pour water to just below level of rack and bring to a boil.
Place shrimp in a heatproof dish and set dish on rack.
Cover and steam for 7 minutes or until shrimp feel firm and turn pink.
While shrimp are steaming, combine broth, wine, tea, sugar, and pepper in a small saucepan and bring to a boil; reduce heat and keep warm.
To serve, pour sauce in center of a round platter.
Arrange shrimp on sauce.
Garnish with mint leaves.
