Hot Ginger Tea
|Fresh ginger root||1⁄3 Pound, peeled, thinly sliced, smashed|
|Dark brown sugar||1 Cup (16 tbs)|
|Toasted pine nuts||1⁄4 Cup (4 tbs)|
In a medium-size saucepan, combine water, gingerroot, brown sugar and salt.
Simmer, partially covered, over medium-low heat 30 minutes.
If stronger tea is desired, simmer longer.
Strain and serve hot in Japanese-style teacups.
Add 2 teaspoons of nuts to each cup of tea.
