Tarte Au Riz

The tarte au riz is a swiss easter rice tart prepared with flour, ground rice, eggs, sugar, jam, cream and a variety of other goodies. Baked with a layer of the jam spread with a topping of the rice and flour, together witheggs, butter, vanilla, sugar and cream, the tarte au riz is specially prepared and enoyed during the holidays.
Ingredients
  Hard butter 1⁄2 Cup (8 tbs)
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Table cream 4 Tablespoon
  Strawberry jam 3⁄4 Cup (12 tbs) (Thick Ones)
  Soft butter 1⁄2 Cup (8 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Egg 1 , beaten
  Vanilla 1 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Ground rice 2⁄3 Cup (10.67 tbs)
  Salt 1⁄8 Teaspoon
Directions

Cut butter into the flour with two knives, then stir in enough cream to form a soft dough.
Roll out on a floured board to fit a deep 9 inch pie plate.
Spread the bottom with a thick layer of strawberry jam.
Cream the 1/2 cup soft butter and sugar together, then add the egg and vanilla.
Stir in the dry ingredients mixed together.
Spread over the jam.
Bake at 375F for 35 to 40 minutes or until shell is golden in color.
Cool before serving.
