Light Lemon Tarts

Ingredients
  Eggs 4
  Sugar 1 Cup (16 tbs)
  Butter 1⁄4 Cup (4 tbs)
  Salt 1 Pinch
  Lemons juice 2 Tablespoon
  Lemon rind 2 Tablespoon
  Pie pastry 1 Cup (16 tbs)
Directions

Combine eggs, sugar, butter, salt, lemon juice and rind; mix well.
Line twelve tart shells with pastry; fill with lemon mixture.
Bake at 425 degrees for 25 to 30 minutes.

can they be frozen in advance?

Hi, I would not advise freezing the same for the tart shell gets a soggy and unpalatable feel on thawing and reheating.
