Ingredients
Frozen pie crust 1 (Recommended Pillsbury)
Egg white 1 , lightly beaten
  Bacon slices 4 , chopped
  Eggs 5 , lightly beaten
  Scallions 3 , chopped
Mascarpone cheese 4 Ounce (Room Temperature)
  Gruyere cheese 8 Ounce, shredded
  Salt 1 Teaspoon
  Pepper 1 Teaspoon
Directions

Preheat oven to 400 degrees.

Thaw pie crust and then prick the bottom with a fork in several places. Then with a pastry brush, coat the crust with the egg white. Place pie crust onto a baking sheet and place in the oven for 10 minutes.

While the pie crust is in the oven, place a skillet over a medium-high heat. Add in the bacon and cook, until it becomes crispy and browned, about 7 minutes. Drain on a paper towel.

In a mixing bowl, combine the cooked bacon, eggs, scallions, mascarpone cheese, gruyere cheese, salt and pepper. Mix until smooth. Pour mixture into the cooled pie crust and place back in the oven for 18 minutes or until the top is a golden brown and eggs have set.

Cool tart for 10 minutes before cutting into. Cut tart into wedges, serve and enjoy!
