Java Cream Tarts
|Sugar||1⁄2 Cup (8 tbs)|
|Strong coffee||2 Cup (32 tbs)|
|Evaporated milk||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Baked tart shells||8|
Combine flour, sugar and salt in top of a double boiler.
Add coffee and milk and mix well.
Cook over low heat, stirring con- stantly, until thick.
Pour slowly over beaten eggs, mix well and return to double boiler and cook over boiling water 3 minutes.
Add vanilla and butter.
Pour into tart shells and chill thoroughly.
