Mrs. Wintle's Lemon Curd Tarts

Ingredients
  Lemons 2 Medium, rind grated
  Lemon juice 1⁄2 Cup (8 tbs)
  Sugar 2 Cup (32 tbs)
  Butter/Margarine 1 Cup (16 tbs)
  Eggs 4 , well beaten
  Baked tart shells 48 Small (Miniature, 4 Dozen)
Directions

MAKING
1. In a large bowl, place the lemon rind, lemon juice, sugar
2. Place the bowl on top of a double boiler
3. Add butter to the pan
4. Heat this mixture on boiling water till the butter melts
5. Add the well beaten eggs and mix well
6. Continue to stir the eggs as they cook over the double boiler.
7. Remove the pan from heat when the mixture starts to coat the back of a spoon. This will take about 15 minutes
8. Cool completely

FINALIZING
9. Fill the mixture into the prepared tart shells

SERVING
10. Serve warm or cold as snacks
