Little Honey Tarts
|Shortcrust pastry||6 Ounce|
|Mixed peel||1 Ounce|
|Chopped walnuts||1⁄4 Cup (4 tbs)|
|Brown sugar||2 Ounce|
|Chopped glace cherries||1 Ounce|
|Coffee icing||1 Tablespoon|
|Walnut halves||1 Tablespoon|
Roll out pastry and cut into 12 rounds with a fluted cutter.
Use pastry rounds to line deep patty tins.
Chop nuts and peel, mix with sul- tanas and cherries.
Cream butter and sugar, beat in honey, stir in fruit.
Place a spoonful of this mixture in each tartlet.
Bake in a moder- ately hot oven for 12 — 15 minutes.
Allow to cool in tins.
Remove cooled tartlets from tins and pour a little coffee icing over each.
Decorate with walnut halves.
