Cheesecake Mince Tarts
|Prepared mincemeat||1 1⁄4 Cup (20 tbs)|
|Pastry tart shells||8 , unbaked (4 inch)|
|Cream cheese||8 Ounce, softened (1 package)|
|Eggs||2 , well beaten|
|Sour cream||1 Cup (16 tbs)|
|Grated lemon peel||1⁄2 Teaspoon|
|Rum flavoring||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
Reserve 1/2 cup mincemeat.
Spoon remainder into tart shells.
Add cheese to eggs; beat till smooth.
Blend in sour cream, lemon peel, flavoring.
Mix sugar and flour; stir into cheese mixture.
Pour over mincemeat in tarts.
Bake in moderate oven (375°) 25 to 30 minutes or till lightly browned.
Top with reserved mincemeat.
