Fruit Lover's Tart
|Quaker oats||1 1⁄4 Cup (20 tbs), uncooked (Quick / Old Fashioned)|
|Firmly packed brown sugar||1⁄3 Cup (5.33 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Margarine||2 Tablespoon, melted|
|Part skim ricotta cheese||8 Ounce (1 Cup)|
|Neufchatel cheese||2 Ounce, softened (1/4 Cup)|
|Powdered sugar||2 Tablespoon|
|Grated lemon peel||1⁄2 Teaspoon|
|Frozen fruits/Fresh sliced any combination fruits||4 1⁄2 Cup (72 tbs), thawed and well drained|
Heat oven to 350°F.
Lightly spray 9-inch pie plate with nonstick cooking spray, or oil lightly.
Combine oats, brown sugar, flour, margarine and egg whites, mixing until moistened.
Press mixture onto bottom and up side of prepared plate.
Bake 15 to 18 minutes or until light golden brown.
Remove to wire rack; cool completely.
Combine cheeses, powdered sugar and lemon peel.
Spread onto oat base; top with fruit.
Refrigerate 2 hours.
Microwave Directions: Combine oats, brown sugar, flour, margarine and egg whites, mixing until moistened.
Press mixture onto bottom and up side of 9-inch microwavable pie plate.
Microwave on HIGH (100% power) 2 1/2 to 3 minutes or until top springs back when lightly touched.
