Pumpkin Party Tarts
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Sugar||1⁄2 Cup (8 tbs)|
|Canned pumpkin||1 Pound (1 Can)|
|Ground cinnamon||3⁄4 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Orange juice||1⁄4 Cup (4 tbs)|
|Vanilla ice cream||1 Pint|
|Pastry tart shells||10 Ounce (Two 5 Ounce Each Packages, 6 To A Pack)|
1. Combine gelatin and sugar in a medium-size saucepan. Stir in pumpkin, cinnamon, nutmeg and orange juice.
2. Cook, stirring constantly, until mixture bubbles and gelatin dissolves. Remove from heat and add ice cream, a few spoonfuls at a time.
3. Spoon pumpkin mixture into tart shells. Chill 4 hours, or overnight. Swirl whipped cream on the top of each tart, if you wish.
